TL;DR: A pale, crisp rosé styled after wines in Southern France  

All grapes come from the Demetria vineyard in Los Olives that has bee using Biodynamic farming principles for the last 15 years. This wine is made from 80% grenache and 10% of both counoise and cinsault. We harvested these grapes at night and sent them direct to the press to retain freshness and keep color extraction low. Fermentation was conducted in stainless steel tanks and the wine aged mostly in tank in addition to a few in neutral French oak barrels to add roundness and richness.
